Norfolk Beefing is a medium-sized culinary apple with an oblate, irregularly ribbed form. The skin starts green and matures to yellow with dull brownish-red coloring, sometimes marked with dark crimson stripes. The flesh is firm, crisp, and brisk with a pleasant flavor. Extensively cultivated in Norfolk, it is used from January to June both for general kitchen purposes and for drying into 'Norfolk Biffins,' a confectionery product.
