Smith Cider is a medium to large apple with bright pinkish-red coloring, firm and juicy flesh, and a subacid, aromatic flavor. Long a favorite in Bucks County, Pennsylvania, it is valued for cider production and culinary uses, particularly in the South and West, though it has not gained wide acceptance in New York where it often fails to develop properly.
