Boiken is a bright yellow German apple, often with a beautiful pinkish-red blush, valued for its vigorous and hardy tree, reliable productivity, and attractive appearance. The flavor is brisk and subacid—good for culinary use and market rather than dessert eating. It stores well and produces light-colored evaporated stock.
