Liberty is a greenish-yellow, red-striped apple developed in New York and introduced in 1978. It is notably disease-resistant with a crisp, juicy texture and white flesh, resembling McIntosh in appearance. This fresh-eating variety stores relatively briefly but is suitable for fall use from October through December.
