Elstar is a Dutch dessert apple with white, firm flesh and intense honeyed flavor, developed in 1955 from Golden Delicious and Ingrid Marie. Medium-sized with predominantly red skin and yellow undertones, it's suitable for both fresh eating and cooking, though it is susceptible to powdery mildew and Phytophthora rot.
