A large, flat culinary apple with pale yellow-green skin, red flush, and broad broken stripes. Raised at Pontoise by M. Remy from Emperor Alexander seed and introduced in 1879. The tender, juicy, sweetish flesh keeps firm and acid, making it useful for garden cooking, though best used before February.
