Bullock is a small, light yellow russet-marbled dessert apple with yellowish, very tender flesh and a mild, rich, spicy, slightly subacid flavor. Originally from Burlington County, New Jersey, it was highly regarded in the early nineteenth century but remains grown only to a limited extent in parts of New York; it has not proven commercially viable despite its fine eating quality.
